Founded by the Romans in 122 B.C. Aix-en-Provence was originally named Aquae Sextiae because of its numerous springs. The café Les Deux Garçons has been an institution for more than two centuries with famous customers such as Albert Camus, Emile Zola and Winston Churchill.

Be sure to sample the famous Calisson of Aix. From Greek and Roman antiquity food lovers have been blending almonds and crystallized fruits. Called Calisone in Italy and Kalitsounia in Greece. According to one of the numerous stories about the birth of the Calisson of Aix, this candy appeared in Aix in its modern shape around 1473, for a meal made for Roi René's second wedding.
